Since...I made this for a potluck dinner in my dorm. Since I'm a poor college student, I replaced half the chicken with some potatoes, carrots, and celery. It went much farther and added some nutrients! I didn't have any fresh basil, so I used dried oregano. I make it several times...This is an amazing dish!!! I make it several times each month. Kiddos gobble it up. Comes together pretty quickly, too! I do a little less oil so the coconut milk and cornstarch don't get too watered down. Also, we serve it with cauliflower rice to cut down the carbs.
