Fresh Basil Pesto

This fresh pesto recipe has been my go-to recipe for the last few years and I was surprised recently to see that I'd never shared it here on the blog.   At least a few times each summer and fall, I will whip up a batch of this delicious pesto, and make some of my favorite pesto recipes (Pesto Tortellini Salad, Chicken Pesto Pizzas,  Pesto and Tomato Pasta, Turkey-Pesto Roll-Ups).  Usually I just make a half batch, since my spindly basil plants often don't have five cups of leaves at a time, but half-batch or full-batch we always manage to eat it all.  Besides the pesto recipes, we love to spread some on our sandwiches or use it as a meat marinade. The ingredients:

¼ cup walnuts
¼ cup pine nuts 
3 Tbs. minced garlic (~9 cloves)  (if you're not a huge garlic fan, then you may want to cut this amount in half)
5 cups fresh basil leaves, packed
1 tsp. kosher salt
1 tsp. freshly ground black pepper
1-¼ cups olive oil
1 cup freshly grated Parmesan cheese


Directions:  Place the walnuts, pine nuts, and garlic in the bowl of a food processor fitted with a steel blade (or in a blender). Process for 30 seconds. Add the basil leaves, salt, and pepper. With the blender running, slowly add the olive oil and process until the pesto is finely pureed. Add the Parmesan and puree for a minute. Serve, or store the pesto in the refrigerator or freezer with a thin film of olive oil on top. Makes 2-1/2 cups.   Serve over pasta, as a pizza topping, stir into meatballs, spread onto sandwiches, or brush over meat as a marinade.  Enjoy!

Grilled Bruschetta Chicken

I don’t know about the rest of the country, but the weather has been positively diabolical this spring here in the DC area.  It was totally frigid last week, even snowing a little one day, then on Monday it was nearly 90°.  Tuesday it was in the 50’s and rainy.  Wednesday sunny and gorgeous.  Hot or cold…which one will win?  It’s like the Republicans and Democrats duking it out on the federal budget.   I don’t pretend to know much about politics or weather, but one thing I know is that grilled chicken will reign victorious in our house any day of the week…rain or shine.  Democrats, Independents, and Republicans will all agree that this  bruschetta topping  on perfectly tender grilled chicken is the sure-fire answer to world peace.  Or at least to dinner-time peace.  Enjoy!

The ingredients:

4 small boneless, skinless chicken breast halves
1/2 cup + 2 Tbs.  sun-dried tomato salad dressing, divided
1/2 cup shredded mozzarella cheese
1/4 cup chopped fresh basil
1 tomato, finely chopped


Directions:  Marinate chicken in 1/2 cup sun-dried tomato salad dressing for 20+ minutes. 

In a small bowl, mix together the cheese, chopped basil, chopped tomato, and 2 tablespoons sun-dried tomato salad dressing.  Set aside. 


Grill chicken and just before removing from heat, place the tomato/cheese mixture on top of each chicken breast. 

Heat until cheese is just melted.  Serve immediately.  Makes 4 servings.

Garlic-Tomato Pasta (with 12 whole cloves of garlic)

I found the recipe for this garlicky piece of heaven over at Stirring the Pot, where Kim originally got it from a Mark Bittman cookbook.  Don't be intimidated by the 12 cloves of garlic...when I say "garlicky" I mean it in a nice pleasant flavorful way, not in an overwhelming way at all.  The dish was easy to make and we all unanimously agreed on a five star rating for this one.   Thank you to Kim for sharing a wonderful recipe!

The ingredients: 


2 Tbs. olive oil
3 Tbs. butter
12 cloves of garlic, crushed
1/2 cup thick sliced bacon, cubed
1 can (15-ounces) crushed tomatoes, drained
salt and freshly ground black pepper to taste
1 pound ziti or penne pasta
1 cup roughly chopped fresh basil leaves
1 cup freshly grated Romano or Parmesan cheese, or a combo

Directions:

Bring a large pot of water to boil. Combine the oil/butter, garlic, and bacon in a medium to large skillet over medium-low heat. Cook slowly, stirring occasionally, until the garlic becomes deep golden, nearly brown, all over, 10-15 minutes. (NOTE:  keep the heat on medium-low or the garlic will burn).

Add the drained crushed tomatoes, along with salt and pepper, to the skillet. Stir and simmer while you salt the boiling water and cook the pasta.

Drain the pasta when it is tender but firm, reserving a little of the cooking water and adding it to the sauce if it appears dry. Toss the pasta with the sauce and most of the basil, along with the cheese.

Mince the remaining basil, garnish the pasta with it, and serve.
