Baked Ziti with Turkey Sausage

Thursday, August 19, 2010

My family went gaga over this rustic Italian dish and I ended up wishing I'd made a double batch for my family of 7.  Serve it up with a salad and some of our favorite French Peasant Bread for a perfectly yummy and well-rounded meal!

The ingredients:

1-1/2 cups whole wheat ziti (or other short pasta)
2-1/2 Tbs. olive oil
1 lb. Italian-style turkey sausage (mild or hot), cut into 4-inch pieces
1 large red bell pepper, chopped
1 small onion, chopped
6 large mushrooms, coarsely chopped
3 cloves garlic, minced
1 tsp. dried oregano
1/2 tsp. dried thyme
1 can (15-oz.) crushed tomatoes
1/4 tsp. salt
1/4 tsp. ground black pepper
1 large ripe tomato, chopped
3/4 cup shredded mozzarella cheese

Directions:  Preheat the oven to 375°.  Cook the pasta according to package directions.  Drain and return to the pot.  Add 1 tablespoon of oil and toss to coat.
Heat the remaining 2 tablespoons of oil in a large skillet over medium heat.  Add the sausage and cook until browned and no longer pink inside, 8-10 minutes.

Transfer the sausage to a clean plate and allow to cool while preparing the rest of the sauce.  Into the same skillet, add the bell pepper, onion, mushrooms, garlic, oregano, and thyme.  Cook until the onion is almost soft, 5-6 minutes, stirring occasionally.  Stir in the crushed tomatoes and cook for 5 minutes.  Season with salt and pepper.

Cut the sausage into 1/4-inch slices and place in a 9x13-inch greased baking dish along with the sauce and pasta.

Toss to combine.  Top with fresh tomato and sprinkle with the cheese.

Bake until heated through and cheese is melted and slightly browned, 20-25 minutes.

Makes 4 servings (I only made a single batch, thinking a 9x13-inch dish is always enough for our family (2 adults and 5 kids), but I wish I'd made more).

Enjoy!

Lemon Blueberry Muffins

Tuesday, August 17, 2010

How much did I like these muffins?  Hmmm, let me count the number of people I told to try these.  Then count the number of people I made them for and you'll start to get a little idea.  I love the buttery texture of these and the hint of lemon just added the perfect touch.  I used 100% whole wheat flour to counterbalance all the butter and still thought they were some of the best blueberry muffins I'd ever had.  :)

The ingredients:

2 cups flour (I used King Arthur's white whole wheat flour)
1 cup sugar
1 Tbs. baking powder
1 tsp. salt
6 Tbs. cold butter, cut into 6-pieces
1 egg
2/3 cup milk
1 Tbs. fresh lemon juice
1 tsp. grated lemon rind
1 tsp. vanilla
1 cup fresh or frozen blueberries (do not thaw)

TOPPING:
2 Tbs. flour
2 Tbs. sugar
2 Tbs. melted butter
1/2 tsp. ground cinnamon

Directions: Preheat oven to 400°. In a large bowl, mix flour, sugar, baking powder, and salt.

With a pastry blender or 2 knives, cut in butter until mixture resembles fine crumbs (you want to be able to see small pea-sized clumps of butter still).

In a separate smaller bowl, lightly beat together egg, milk, lemon juice, lemon rind and vanilla until blended.

Stir egg mixture into flour mixture until just blended (do NOT overmix). NOTE: Batter will be somewhat thick.

Fold blueberries into batter.

Spoon batter evenly into well-greased muffin pan.

For topping, in a small bowl, combine flour, sugar, melted butter, and cinnamon until well blended.

Spread mixture evenly over tops of muffin batter.

Bake for 15-20 minutes at 400°. Muffins should be golden brown. Serve warm. Makes 12 standard size muffins. Enjoy!

Garlic Chicken with Bow-Tie Pasta

Thursday, August 12, 2010

This kind of pasta dish is one of  my family's favorite kinds of meal.  They love the noodles, the tender chicken, and the garlic flavor and I love that it's healthy as well.   Take note of the fact that the recipe only calls for 2 cups of dry pasta.  I didn't notice until after I'd cooked up the whole box and while it was still tasty...it was just a little heavy on the noodles.  I found this little treasure over at Sister's Cafe, which happens to be one of my favorite sites to find new recipes.  :)

The ingredients:
1 Tbs. olive oil
1 lb boneless, skinless chicken breast, sliced crosswise
1 tsp. salt
1 Tbs. olive oil
1 rounded Tbs. crushed garlic (6-8 cloves)
1/2 lb. mushrooms, quartered
1/2 cup green onions, sliced
3/4 cup red or orange bell peppers, chopped
1 can (14.5-oz) diced tomatoes (undrained)
1/2 cup chicken broth
1/2 tsp. crushed red pepper (use less for a milder flavor)
1/2 tsp. cornstarch
1/2 tsp. salt
2 cups dry bow tie pasta, cook as directed on package
1/4 cup fresh cilantro, chopped (may use fresh parsley)
Parmesan cheese, grated

Directions: In a large non-stick skillet, heat 1 tablespoon oil on medium-high heat and saute chicken until done. Sprinkle with salt and remove from skillet. Keep warm.

In same skillet, saute garlic in 1 tablespoon olive oil until golden.

Add mushrooms, green onions and peppers and cook an additional 2 minutes.

Add tomatoes, broth, red pepper, cornstarch and salt. Heat to boiling then reduce heat and simmer 5 minutes.

Remove from heat. Combine chicken, hot garlic mixture, pasta and cilantro. Sprinkle generously with freshly grated Parmesan cheese. Serves 4. Enjoy!

BBQ Chicken Quesadillas

Tuesday, August 10, 2010

It's August now and I'm just barely feeling like we're getting into the swing of the summertime.  Our days are filled with playdates, swimming at the pool, and staying up too late.  I've been having fun taking advantage of the more laid-back schedule to try some fun new summer recipes.  This one was a hit with the whole family.  I left off the spicy chilies for the little ones, but personally  I loved it with the little kick of spiciness.  You'll want to serve these immediately or your bottom tortilla will get  a little soggy.

The ingredients:
8 flour tortillas (8-inch)
1 can (4-oz.) chopped mild green chilies
2 cups cooked, shredded BBQ chicken (you can buy it pre-made or make your own by adding BBQ sauce to shredded chicken)
1/2 can black beans, drained and rinsed
1/2 cup shredded extra sharp cheddar cheese
1/2 cup bottled taco sauce
1 cup salsa
1/4 cup sour cream
cilantro sprigs for garnish

Directions: Preheat oven to 450°. Place 1 tortilla on a large baking sheet.  Spread with 1 tablespoon chilies.

Top with one-quarter of the chicken, black beans, cheese, and taco sauce.

Place another tortilla on top.

Repeat with remaining tortillas, chilies, chicken, black beans, cheese, and sauce, to make a total of 4 quesadillas.

Bake in 450° oven for 5 minutes, then with 2 spatulas carefully flip the quesadilla to the other side and bake for an additional 4 minutes or until tortillas are golden.

With a pizza cutter, cut each quesadilla into wedges.

Garnish with salsa, sour cream, and cilantro. Serve immediately.

Enjoy!
