Menu 9/5 - 9/11

The kids are heading back to school this week and I decided it's time to get my act together and actually start planning my menus again, instead of cooking by the seat-of-my pants, like I've done all summer.   Here's to another great year (hopefully)!  


Monday--Ranch Mac & Cheese--It's supposed to be a rainy Labor day, so we're just going for easy comfort food for our last dinner before the kids go back to school on Tuesday. 

Banana Chocolate Chip Pancakes with PB Syrup--Back-to-school breakfast!

Yogurt-Parmesan Baked Chicken--It's been a while since I made this dinner, but I remember really liking the flavor on this. 

Wednesday--Cottage Meatloaf (new)

Thursday--Honey-Lime Enchiladas--This is one of our favorites, plus it's easy to make as well. 

Friday--Bruschetta Pizza on Quick Whole-Grain Pizza Crust--My hubby and I love this fresh tomato topped pizza. 
Lemon Drop Cookies--Chewy, tart, and sweet...these cookies are dynamite!

Saturday--Spinach and Chicken Pasta Salad--Simple, easy, and healthy for our first Saturday of the school year. 

Ice Cream with Homemade Magic Shell Topping--Yep, it really hardens when you pour it on top of ice cream and it tastes fabulously too!
